Tennipon and Coconut Cream Pie

It was Friday morning, the 12th, and that evening would be Kristen's family night. (We take turns each week, and whoever's turn it is, gets to decide what we will do as a family each Friday.) A couple years ago, almost every Friday afternoon, we would go to the sport's center, and play Tennipon. It's a mixture of tennis and pingpong. :) You use a yellow ball that's really soft, and use a racket? paddle? that is short, and the main part of it has lots of holes in it. It's a fun game, and we hadn't done it for a long time. Also, Jordan Lendt is with us, and we are having fun showing him lots of unique things, and having him try lots of Japanese foods. :) So, Kristen decided that we would go play Tennipon, and we planned to go around 3:30 or 4:00.
I wanted to make a Coconut Cream Pie to eat after supper, and I started shortly after lunch. We have a really yummy recipe, and I made it very carefully, because we all really like Coconut Cream Pie, and it wouldn't do to have it spoiled if I burnt the filling or something! ;)
I got the filling all mixed up, and then made the crust. I rolled out, and put it in the pie plate, and crimped the edges all around, and popped it in the oven, because it's supposed to be baked before I add the filling, and then bake it a little longer with the meringue. Mama had just come down, and said that we all needed to get ready to go. I didn't remember how long the crust was supposed to be baked, but I figured it would only need to be about 10 min. so I ran upstairs and got ready to go, planning to take it out when I came down, or just before we left.
I came downstairs, and was looking around for my tennis shoes so I could clean them up to wear in the  gym. I never did find them, but I found a pair of tennis shoes that is no ones in particular, so I used them. So, everyone got their shoes together, and their jackets on, and we headed off for the gym.
We had a fun time, and I'll attach some pictures.
Left to Right: Mom, Emilie, Me, Jordan, Rachel, and Ann. You can kind of see what the rackets look like. They had all sorts of colors we could use. Rachel played some, but she sprained her foot in March, and it still hurts.
Dad and Jordan played some singles. The ball is that yellow thing flying through the air. I think Dad and Emilie were the best, because they play tennis, but the rest of us just had fun. ;)
When we got done, and went outside, the snow was coming down in great BIG snowflakes, so we tried to catch some. :)
As we were driving home, I suddenly remembered my pie crust!!! I told Mom and the girls, and we were all hoping that nothing serious had happened. It had been about an hour and a half, so I knew it would be burnt really bad. When we were coming down our driveway, since I was sitting closest to the van door, Mom gave me the keys so I could unlock the door, and get the windows opened, the oven turned off, and the fan on. :) So, as soon as we were stopped, I jumped out, and unlocked the door, and ran to kitchen. It was smoky as I expected, but nothing worse. I opened the windows and turned off the oven, but I didn't open the oven because I didn't want it to get even smokier. (I was so glad it was just the crust! I did want my pie to turn out nice.) Ann wanted to see what the pie looked like, so I took it out. :) Here's what it looked like.
Thankfully I had enough pie dough left over to make another crust. I threw the burnt crust away, and rolled out the new crust, and added the filling, put the meringue on top, and some coconut, and put it in the oven. THIS TIME, I turned on the timer, and didn't forget it. ;)
Here's the finished product. :)
After supper, we ate the pie, and then we played a game. It was fun. Everyone really like the pie, and I was glad because, after all, If no one liked the pie, I would feel rather crustfallen. ;)

  1. Despite the burned crust episode, your pie looks absolutely beautiful! I haven't made a lot of pies through the years. I should do it more often. A few years ago, I made one for Uncle Roger for Valentine's Day. Coconut pie is one of his favorites. He has told me that Grandma first made it for him when he was a boy and was watching an episode of Gilligan's Island on TV. Your Mom and Dad probably know about that show. In the show seven people are stranded on a deserted island and there are coconut palms there. One of the girls decides to make a coconut pie in one of the episodes. When Roger saw that, he asked Grandma if coconut pies were real. He asked her to make one for him and has loved it ever since! Next time you come to the States for a visit, I know that Uncle Roger will want want you to make him one (the rest of us would love it too!) Love you!
